The flowers that appear between May and June are white, in fragrant, honey-sweet hanging bunches. The characteristic scent of its flowers is highly prized in perfumery. Its honey is called “acacia honey”, which is botanically false but tolerated by usage. In France, it is often referred by the commun name “acacia”, while the species Acacia dealbata is commonly known as “winter mimosa” or “florist’s mimosa” although it is not part of the genus Mimosa.
The name acacia comes from the Greek word akis meaning spike or thorn because many species of the genus defend themselves against herbivores by thorny twigs.
